This was a perfect side dish for our Heisenburgers that we made last week, and it was so colorful and flavorful, that it would make a great addition to any meal!
You will need:
- 1 head of romaine, washed and shredded
- 1 large red bell pepper
- 1 can of corn, drained
- 1 can of black beans, drained
- bag of tortilla strips (find them near the croutons and salad dressing)
- Chipotle ranch salad dressing
The only big step here is making the roasted red peppers. You turn your burner on high (gas or electric, both work fine) and carefully singe each side, turning it with tongs to get it evenly roasted. Then cut off the top, and slice into 3 inch long strips.
Then just toss everything together and drizzle with the chipotle mayo. If you want to kick it up a notch, add grilled chicken and make it the main course.
Even for gluten free people, the salad is great without the tortilla strips. They just add another splash of color and a yummy crunch. But the corn, beans, and roasted red peppers really pop against the green romaine background, so you have a striking dish either way.
It’s basically the perfect summer salad, and it has lots of bold, Southwest flavors that channel New Mexican cuisine. Throw some meth in there, and you have an awesome Breaking Bad themed dinner!
